vegetable bonanza

more veggies arrived today. and after several cook-a-thons on the weekend, we still have a fair amount left from the last two weeks. i blame it on all the nights out working on the new house.

the challenge this week was artichokes, so on friday night while adam continued work on the house i cooked us artichokes in vinaigrette followed by carrot and sweet potato soup followed by a spinach and feta lasagne.

as we furnish the new house we have been allowed, within reason, to upgrade things in our house and put the old stuff in the new house. we haven't used this option much, because we are generally just buying the cheapest stuff anyway. but we did get nice new knives which glide through tomatoes and citrus like they are butter. and of course, i was about 3 chops into the three course meal above when discovered that the new knives glide right through human flesh like butter. so an amusing ten minutes followed with me, home alone with a sick cat i was already keeping half an eye on, dripping blood everywhere trying to apply pressure and paper towel while cleaning up cat vomit (they always know the best time/place) and trying to find a bandaid.

Suffice to say the cut wasn't that bad since i managed to finish the dinner, which adam appreciatively wolfed down. but i did get to spend £20 at the chemist on standard bandaids, superduper bandaids, lotions and potions as well as latex gloves so i could still work on the house.

And the house is all but done. Adam finished the lounge, helped me finish painting the bathroom, bought the furniture, appliances, crockery etc., put together the furniture, organised the gas, electricity, tv etc., interviewed tenants... and finished the lasagne.

the new challenge: fennel.

Aahhh, Fennel! Slow baked with olive oil & crusting of pepper. Yum!
